Because 1.0 hasn't become the official stable release, the only existing
documentation is currently targeting developers:

I'm using syncevolution 1.0 pre release on the Debian box [1]
and
syncevolution from the "extras-devel" Maemo 5 repository.
For Bluetooth sync, you don't need SyncEvolution on the N900. You'll
start the sync with SyncEvolution on your desktop, then the
closed-source integrated SyncML support on the N900 will respond.
