I'm sorry for my late reply.
No, I experimented with different configs and didn't realize that they
wrote in different address books.
It is a bummer, that this main task which really every user of mobile
devices needs, is not really implemented to use easily.

The choice of the default local address book is a bit fuzzy, but usually
it should pick the "Personal" address book (aka system) even if more
address books are added later.

The SyncEvolution "backend" config property can be set to select a
specific address book, instead of using the default. That should fix the
problem of using the wrong one.
Syncing multiple address books is difficult. SyncEvolution supports it,
but most peers don't.

Android supports more than one address book. The Synthesis SyncML app
allows you to choose and create local address books. I don't remember
whether it supports more than one address book per server. If not, then
at least configuring the same server multiple times with different local
and remote address books should work.
